You see, he had to take part in this because my MIL's directions said to "add spices to taste" and well, I'm not tasting anything with diced tomatoes and kidney beans. So, together hubs & I made some pretty good chili! (I know it was good because it smelled good, & I tasted a bite of the meat with a noodle. Don't worry I didn't go all veggie-lover on you guys. I enjoyed some fabulous chicken cordon bleu while he ate yummy smelling chili.)
Our creation:

Here is the recipe, I'm praying my MIL doesn't mind me sharing it with you guys. I doubt she will.
2 lbs of ground beef
onion diced
green pepper diced
2 lg cans of tomatoes (crushed or diced)
2 lg cans of kidney beans
1. brown meat w/onions & gr peppers
2. Drain
3. Add tomatoes, beans, spices (spice to taste)
4. Cook until hot - serve over noodles
*I cut the recipe in half since it was just hubs eating it.
Today I decided I wanted to bake something. So, I made No Bake Chocolate Oatmeal Peanut Butter cookies. These are delicious & super easy to make!
2 cups sugar
1/2 cup cocoa
1 stick butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter
Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.
Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.
Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

Good morning from Tokyo! As a Southern expatriate and fellow brunette, I thought I'd stop by to say hello. Chili on cold, Fall weekend is just perfect and as we've been cold for a while, I'm going to have to break out our family favorite: winter white chicke chili.
